Teflon-Coated!
Just got a P7 back from being refinished. Haven't fired it yet, but here's some photos:

Note that the piston is coated. Neither the cylinder nor the bore are coated. Taking the grips off, a quick look revealed only one part - a spring - not coated.
Note also that somewhere along the line the right rear sight insert was lost. After taking the photos I clipped off a bit of white pipe cleaner as a temporary replacement.
The finish is a flat, almost matte black. Where it wore a bit from the test firing at Cylinder and Slide it looks shiny enough to be mistaken for bare metal at first glance. However, I only found two tiny places - both on the recoil spring - where the finish is actually missing. That is a bit disappointing, but given where the worn spots are understandable.
